Farmers || Future

We're old organic gardeners. We sell at health food stores and farmers markets. I would like to be allowed to make and sell sauerkraut - its the safest food - even the FDA agrees and there is no recorded deaths from sauerkraut. The GOVERNMENT says we're not allowed to make and sell it.

Why not?
The rules are if one cuts veges that's mfg, whitch without DA inspection of my kitchen is illegal. Really it's growing the lactobacillus that we're growing.
If we could get sauerkraut on the kitchen industries list, we wouldn't need the inspection. The inspection cannot be passed by a normal household.

Do you mean if you cut the cabbage to make sauerkraut?

And is it the department of agriculture that comes out to inspect you kitchen?

Why can't a normal household pass the inspection?

Does your community have a functioning community kitchen that can pass the inspection?

Yes, the ODofAg came to my house to inspect my kitchen. I turned them away. Part of the reqts are stainless steel sinks(3), sterile water(no bacteria), no pets or rugs etc. The community kitchen is 1& 1/2 hour drive each way.Check in ORC 901:3-20-04.
investing is always required for a start up business..if there is no risk in starting this business it will be overcrowded anyway..
